When my alarm goes off at 5:30 a.m. I have a hard time remembering what my name is, let alone figuring out how to prepare a moderately healthy breakfast. Oatmeal does the trick, sort of, but after several days in a row of oatmeal I get the urge to mix things up. Tonight I made this recipe, only I used turkey instead of ham (due to personal preference) and vegan “mozzarella” (because no matter how much I love dairy, it will never love me back).
